Use Amylase Enzyme to breakdown sugar and starch in your higher adjunct mashes by digesting your carbohydrates (polysaccharides) as smaller disaccharide units, and converting them into monosaccharides. Use to reduce the final gravity of your beer and add when pitching your yeast to breakdown those non-fermentable sugars and make them fermentable. Also known for preventing starch haze. All you need is 1 teaspoon for a 5 gallon batch.
