This blend of our favorite New England-style IPA strains is great for producing beers with a hazy appearance and tropical, fruit-forward esters. Producing dry, yet juicy beers, the mango and pineapple characteristics will lend to added drinkability.
**This strain has been genetically typed in our lab using polymerase chain reaction (PCR). Through this genetic testing, we have determined WLP067 Coastal Haze Ale Yeast Blend to contain the STA1 gene (glucoamylase), a potential indicator of Saccharomyces cerevisiae var. diastaticus. Brewers yeast are natural hybrids, which make it possible for certain strains to display elements of the STA1 gene. These strains have the ability to utilize some dextrins (unfermentable sugars), resulting in higher levels of attenuation than what is considered typical. (Anecdotal evidence from Coburn: “This strain starter out crazy juicy and perfect for NEIPAs. However, due to the STA1 gene I noticed that the beer dried out over the course of a month. The beer was still fantastic but lost a lot of its “juicy” qualities and resembled a west coast IPA. I took a second final gravity reading after a month and noticed that the final gravity had dropped from 1.012 to 1.007 at cold temperatures in the keg. We would recommend not bottling with this strain and using WYEAST 1318 or Safale S04 as an alternative)
